Dr. Hans Backhoff Escudero, the head winemaker at Monte Xanic for 30 years, firmly
believed that he could alter the course of global winemaking history, turning over a new
leaf for Mexico as a producer of excellent-quality world-class wine.
The five friends who founded Monte Xanic (Ricardo, Erick, Manuel, Tomás) launched
the winery as a gamble on their dream. They were all wine lovers who took a chance
on making wine to “serve and share.”
And so it was that in 1987 Monte Xanic changed the history of Mexican wine by making the first premium Mexican wine, leading to recognition for regions like Guadalupe Valley, in Baja California.
Innovation has been the path to stay at the cutting edge of the industry. For the first time ever, Mexican wine is at the top of the list of the most important and fastest- growing origins in the market.

Nowadays, we are the third most-valuable winery in the Mexican wine industry. We have gotten to where we are thanks to our full commitment to professionalizing the Mexican wine industry and our great passion for our product.

Hans Backhoff Guerrero, CEO
The name Xanic comes from the Cora natives, who still live in regions of Nayarit,
on the Pacific coast of Mexico. It means “flower born of the first rains.”
Ours is a wildflower. A desert flower transformed by water and sunshine. Like our wines, it is hardy and stands up to time.
Xanic, with the “x” of Mexico, is a reflection of our youth and exuberant personality, similar to the origins of our wines: Guadalupe Valley and Ojos Negros Valley.
GUADALUPE VALLEY AND OJOS NEGROS VALLEY
Our wines have gotten the names of Baja California and Mexico on the map of
minds and countries the planet over, as the world has come to know our people
and our history.
Guadalupe Valley is located 30 kilometers from Ensenada (northeast) and 95 kilometers from Tijuana, bordering the United States. The vineyards are therefore the northernmost of Mexico, just 21.6 kilometers away from the sea. The vines grow at altitudes ranging from 300 to 400 meters above sea level. Proximity to the Pacific Ocean brings currents of humidity, creating a micro-climate in the valley.
Guadalupe Valley is now Mexico’s most prestigious winemaking region, home to 85% of national wine production.
The character of these lands defines the style of our wines. Monte Xanic has six ranches, three of which are in Guadalupe Valley (Monte Xanic, 7 Leguas, and Olé) and the other three of which are in Ojos Negros Valley (Viña Alta, Ojos Negros, and Viña la Cienega).
Ojos Negros Valley
Monte Xanic’s newest terroir: Ojos Negros Valley is located 30 kilometers away from
Ensenada and 900 meters above sea level. With a colder climate than Guadalupe, the
biggest advantage in Ojos Negros is the quality of the waters. The soil is medium texture
with good water retention and no salts found in the soil.
The main varietals we grow on our land are Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot, Malbec, Sauvignon Blanc, Chenin Blanc, Syrah, and Chardonnay, to express the elegance and distinction of our region.
Baja California is an intrinsic part of Monte Xanic.

The volume of grapes we grow ensures that we can keep strict control over their most important features. This makes it possible to accurately determine the harvest date and select only those bunches of grapes that meet our quality standards.
Monte Xanic was one of the pioneers in introducing nighttime harvesting in Mexico.
We have root systems and clones of various vines optimal for the conditions in each valley.

In January 2020, Monte Xanic once again earned the ISO 9001:2015 certification
for our harvest, production, and shipment processes, as well as our tasting service,
confirmed by the Monte Xanic Quality Management System.

- The winery uses three different winemaking processes for reds: roto-fermenters, traditional pumpover (remontage) tanks, and immersion tanks. This helps us get different concentrations in the wine to obtain the best extract from the grapes. Fermentation is done under controlled temperatures in French oak barrels.
- Monte Xanic was among the first to ferment white wines at low temperatures (10- 12 degrees Centigrade) in order to preserve the wine’s aromas and flavor.
- Monte Xanic implemented the micro-oxygenation system, a technique that enables better-structured wines, making them more stable and long-lasting, and preserving their fruit and gentleness for a longer time.
- The barrel cellar was designed by renowned architect Diego Villaseñor and has enough capacity to store 4,000 barrels, all under optimal temperature and humidity conditions.
- The cellar also boasts a network of gravity-transfer pipes, which gently move the wine from the fermentation tanks to the barrels.
- We use French oak barrels sourced from the Alliers and Never forests.
- Bottled under controlled aseptic conditions with microbiological analyses.

Hans Joseph Backhoff.
Hans is a graduate of the Engineering and Food Sciences School at the Monterrey Institute of Technology and also holds an MBA from Cardiff University in the UK and studied Enology in Bordeaux, France. In 2008, he was named CEO of Monte Xanic. His innovative vision has allowed the winery to develop new products using the best technology while maintaining the production processes that guarantee consistent quality. In this way, Monte Xanic has generated a solid strategy to develop the wine-drinking culture, and has earned multiple international recognitions, making Monte Xanic a wine leader in Mexico.
MONTE XANIC WINEMAKER
Oscar Gaona is a Mexican winemaker with 22 years of experience in the winemaking
industry, whose passion for wine has taken him to work in Mexico, Australia, Canada, and
the United States.
Throughout his career, he has been a firsthand participant in the growth and evolution of Mexican wine quality, which has helped him come into contact with countless Mexican wineries.
His interest in wine was sparked from a young age, which is why he decided to learn about the entire winemaking process under the mentorship of winemaker Francisco Rodríguez, starting in the nineteen-nineties. That same desire to be winemaker led him to study Biotechnology Engineering at the Monterrey Institute of Technology, and then Enology at the University of Adelaide in Australia.
Oscar has dedicated himself to the task of understanding each vineyard in each valley to perfection, mastering the biochemical processes involved in winemaking to express each varietal and achieve excellence in each bottle of wine he makes.
ABOUT DR. HANS BACKHOFF (MONTE XANIC WINEMAKER 1978-2017)
Dr. Hans Paul Backhoff Escudero, Founding Partner of Monte Xanic (1946/2017).
It was a passion for wine that shaped his life. He left behind a career in the food canning industry to conquer his dream and elevate the name of Mexico and Guadalupe Valley. Born to a German father and a Mexican mother, Dr. Backhoff studied Biochemical Engineering at the Monterrey Institute of Technology and earned a PhD in Food Science from University of Nottingham in the United Kingdom, where he lived for five years.
“I was born in Mexico’s number-one winemaking region, so I have been in contact with wine since I was very Young. I studied disciplines very closely bound up in winemaking. I have also taught university-level classes on fermentation, and I have always been passionate about the topic,” H.P. Backhoff said.
After working with fruit, Hans realized that grapes were his ultimate goal. He was convinced that Guadalupe Valley could produce world-class wine.
That’s how, in 1987, alongside Manuel, Tomás, Eric, and Ricardo, he founded Monte Xanic. “I was producing wine on a very small scale until a I met a group of people who supported my business plan to make the Monte Xanic dream come true, together,” H.P. Backhoff said.
Willing to set aside for volume for quality, the “flower born of the first rains” arrived in 1989 with Dr. Backhoff’s first harvest of 6,200 cases of Chenin Colombard and Cabernet Sauvignon. Since then, and until he passed away, Dr. Backhoff took the lead on developing winemaking and enology at the winery.
“Not all techniques used around the world to produce wine work everywhere. We experimented a lot, but we kept harvesting white grapes by hand at night to reduce the risk of oxidation to the fruit, and we kept wine production low, preferring to focus on quality,” he remarked. By1989, just two years after the innovative Dr. Backhoff turned full time to wine, the signing of the free trade agreement between Mexico and the United States was sealed with a toast of Monte Xanic Chardonnay.
"Wine is an intellectual beverage, because of the complexity required to make it. Weather conditions come into play year after year, which means that no two harvests are ever alike. The weather conditions from earlier years also have an influence,” Dr. Hans P. Backhoff Escudero once said.
In 2008, he welcomed his son Hans Joseph as CEO of Monte Xanic. Working closely alongside his father, he turned his attention to improving the winemaking techniques.
Dr. Backhoff left behind a solid legacy of passion, hard work, and constantly striving to be better. He is a pioneer who shaped the entire winemaking industry in Mexico and a region that still bears his mark in its grapes.

Because we are an operational winery, we have to adhere to
strict quality standards, so we ask you to please follow the

Guadalupe Valley is a Mediterranean micro-climate, so temperatures range between 15ºC and 20ºC from October to February. In summertime, temperatures may climb as high as 35ºC. There may be scattered rain showers between November and March.
The vendimia, or harvest festival, is the most important time of year for us, as it marks the
beginning of our harvest season.
Monte Xanic’s harvest festival parties are known for offering a sophisticated wine to our guests, alongside local art and cuisine from Baja California. The harvest festival is held the first weekend of August every year.
We kick off the harvest festival with a Twilight Concert, open to anyone who wants to enjoy an exclusive concert in the middle of our main vineyard.
